Bringing In The Holidays With Chef Greg Parish

SDM- Chef Greg, you have been a chef for a long time. You have catered weddings, birthday celebrations, housewarming parties and many other celebrations. What motivated you to want to become a chef?

Greg- I grew up working in the food service industry with my parents. My mother started her wedding business in 1981, and my father opened his gourmet popcorn business in 1983. Working with them, I discovered my passion for food.

SDM- You have also been a vendor at the State Fair of Texas. Tell us about that.

Greg- We have been vendors at the State Fair of Texas since 1985. Next year we are celebrating our 40th anniversary as vendors. We are four-time Big Tex Choice Awards finalists and two-time Big Tex Choice Awards winners. We have appeared on The Discovery Channel, A&E, The Food Network and serval local news channel’s and radio stations.

SDM- You create an array of delectable dishes for the holidays. What creations are the most requested from your customers?

Greg- Right now charcuterie boards are our most popular items. We also serve a lot of our “Fair Food” items as appetizers such as Fried Seafood Gumbo Balls & Fried Chicken Alfredo Balls.

SDM- I know this is a tough question, but what’s your favorite holiday dish?

Greg- I particularly don’t have a favorite dish, but I would say it’s the charcuterie boards because it gives me a chance to get really creative.

SDM- Holidays are certainly peak season for you! Do you have any booking space left for catering? If so, how can they reach you?
